Charred grapefruit — bitter, slightly caramelized, with the smoky edge of fruit that's been over a flame — plus sea salt and quinine for structure. Dry, complex, and built for a G&T.
A tonic concentrate that replaces ordinary tonic syrup. The char gives it more body than most tonics; the salt rounds out the bitterness.
Key ingredients: Cane sugar, charred grapefruit, water, lemon juice, cinchona bark (source of quinine), sea salt, citric acid.
