Bright lemon forward, then floral elderflower, with hops quietly bringing a dry, earthy snap at the back. A Tom Collins profile in one bottle — just needs a spirit and soda.
Built to mix 1 part concentrate with 1 part AF gin alternative and 4 parts soda water. The Rayas (founders Joe and MariElena, Charleston SC) bar-tested this one for years at The Gin Joint before bottling it.
Key ingredients: Cane sugar, water, lemon juice, citric acid, natural elderflower flavor, Cascade hops, ginger root, honey.
Good to know: Alcohol-free (0.0% ABV). Made in Charleston, SC by Bittermilk LLC — founded by husband-and-wife team Joe and MariElena Raya (formerly The Gin Joint). Family-owned.
How to enjoy: 1 oz Bittermilk No. 2 + 2 oz AF gin alternative (try Seedlip Garden or Monday Gin) + soda water, served over ice in a highball. Garnish with a lemon twist.
Swizzle's Take: The hop note is what makes this work with AF gins — it gives back the structural bitterness that alcohol free distillates sometimes miss.
