Pale-gold sparkler with peach and pineapple over a verjus-bright base, with a long grapefruit-peel finish — Proxies Bubbly White drinks like a Pet-Nat with the funk dialed back. Crisp, dry-leaning, properly food-friendly.
About Proxies
Proxies started as a project from Acid League, the Toronto-based culinary lab founded by two chefs who first built a fan following with their drinking vinegars. Each Proxy is composed from the ground up — unfermented grape must, fruit, teas, spices, bitters, and a backbone of acid — to create something that drinks like wine or cocktails without trying to imitate them. Chef-driven, layered, food-friendly.
Key ingredients
- Verjus + grape must — the wine-acidic backbone.
- Peach + pineapple concentrate — soft tropical fruit.
- Tea blend (Kambaa black + hibiscus) — tannin and structure.
- Grapefruit peel + pomelo extract — bright, dry citrus finish.
Good to know
- Chef-driven, layered, complex.
- Built on grape must + bitters + tea + acid — not flavored water.
- Vegan, lower-sugar, food-friendly.
- 250 ml single-serve can. Best chilled.
Contains grapefruit. If you take prescription medication, check with your healthcare provider — grapefruit can interact with several common drugs.
How to enjoy
Drink ice-cold straight from the can or pour into a wine glass. Pairs with oysters, light pasta, fish tacos, takeout night.
Swizzle's Take
Our most Pet-Nat-feeling NA pour. The verjus + tea backbone gives it real wine structure.
