About Proxies
Proxies started as a project from Acid League, the Toronto-based culinary lab founded by two chefs who first built a fan following with their drinking vinegars. Each Proxy is composed from the ground up — unfermented grape must, fruit, teas, spices, bitters, and a backbone of acid — to create something that drinks like wine or cocktails without trying to imitate them.
